Shrimp and Grits

Ok y'all, this is very easy so learn to cook it. Grits can be used with any meal like you would use mashed potatoes, rice, or polenta.

Ingredients

Grits:

1 cup stone ground grits (white or yellow)

3 tbsp butter

8 oz. grated cheddar cheese

Shrimp:

1 lb fresh Gulf shrimp

3 slices of bacon

2 green onions, separate white part and green part and finely slice each

1 clove garlic, minced

1/4 cup white wine

Flat-leaf parsley

Directions

Boil 4 cups of water, then add grits a little at a time, stirring constantly for 2 minutes to prevent clumping. Reduce heat to low, cover pot, and cook 20-30 minutes until grits are tender. I stir every 5 minutes so they don't stick to the bottom of the pan. When grits are done, add butter and cheese and stir to combine.

While grits are cooking, fry bacon in pan until crisp, then remove bacon and cook the white part of scallions, garlic, and shrimp in the bacon grease for 1 minute, add wine, and cook 1 minute more until shrimp are 145 degrees in the center. Chop bacon and add to shrimp.

Put grits on a plate with shrimp in the center and top with parsley and green part of green onions.
