Shoe Peg Corn Casserole

Ingredients

1/2 cup onion, chopped

1 cup celery, chopped

1/2 cup bell pepper, chopped

1 cup mild cheddar, grated

10 ounces frozen corn, cooked

10 ounces frozen French cut green beans

10 ounces canned cream of celery soup

Salt and pepper, to taste

1 stick butter, melted

1 stack Ritz crackers

Directions

Preheat oven to 350 degrees. Mix all ingredients except butter and crackers. Stir and pour into 9 x 12 oven proof baking dish. Combine butter and crackers and sprinkle over top of casserole. Bake in oven 30 minutes or until golden brown. This casserole may also be heated in microwave oven 10 to 12 minutes on HIGH.

Makes 12 servings
