Heat oil in heavy Dutch oven. Add beef and brown over low heat. Add water and salt and simmer over low heat about 3 hours. When beef is tender, drop noodles into boiling broth a few at a time to avoid the noodles sticking together. Cook 10 minutes and serve hot.
Homemade Noodles: Mix together egg, salt, milk and flour to form stiff dough. Roll out dough on floured surface until very thin. Let stand 20 minutes to dry slightly. Roll up and slice into 1/4 inch wide slices. Unroll and allow to dry for 2 hours while beef cooks.
