Potato Salad

Ingredients

5 cups cooked new potatoes, cubed

2 teaspoons sugar

2 teaspoons vinegar

2 eggs, hard-boiled, sliced

1/2 cup onion

1 cup celery, chopped

1 cup mayonnaise

Salt to taste

Directions

Sprinkle potatoes with sugar and vinegar while they are still hot. This allows the flavor to penetrate the potatoes. Add remaining ingredients and toss. Chill for several hours to blend flavors.

Makes 8 servings.
