Pandemic Luau Fried Rice

Whenever there is a global pandemic or other survival situation, delicious shelf-stable dishes are your friend. These dishes are made using ingredients you should always have on hand in case there is an interruption in the food supply or civilization breaks down. What better time is there for a luau?

Ingredients

SPAM & Canned Pineapple Fried Rice

1 SPAM diced

15 oz. can of pineapple, drained. Drink the juice or reserve it for making the sauce.

3 cups cold cooked rice (I use refrigerated leftover rice)

1/2 tsp granulated garlic

1/2 tsp granulated ginger

1 tsp soy sauce or fish sauce

Sweet and Sour Dipping Sauce (optional)

reserved juice from can of pineapple

1 tbsp ketchup

1 tbsp vinegar

1 tbsp sugar

1 tbsp soy sauce or fish sauce

1 tbsp corn starch mixed with water to make a slurry

Directions

Fry the diced ham in a dry pan over high heat until it gets golden brown. This will render plenty of fat for the dish. Add diced pineapple and stir fry until it is heated through. It will pick up the rich color from the browned spam. Add the granulated garlic, powdered ginger, and the cold cooked rice and toss until the rice is warm and the garlic and ginger are fragrant. Add the soy sauce or fish sauce and toss to coat.

For the reserved pineapple juice:

Drink the juice from the can with rum for the ultimate survival cocktail, or make the optional dipping sauce

Boil the leftover pineapple juice in a pan with ketchup, vinegar, sugar, soy sauce. Add the corn starch slurry and stir to thicken. Makes a great condiment!
