Mandarin Salad

Ingredients

1/4 cup almonds, sliced

1 1/2 teaspoons sugar

1/4 head iceberg lettuce

1/4 bunch romaine lettuce

2 stalks celery, chopped

2 green onion, chopped

11 ounces can mandarin oranges, drained

Dressing:

1/4 cup oil

2 tablespoons sugar

2 tablespoons vinegar

1/2 teaspoon salt

Directions

Cook almonds in sugar over low heat, stirring constantly, until sugar is melted and almonds caramelize. Cool on baking sheet, break apart and set aside. toss together lettuces, celery and green onions in salad bowl and keep cold until servings. Pour dressing over lettuce mixture and toss. Add mandarin oranges and almonds. Toss lightly to mix.

Dressing: Shake dressing ingredients in jar and refrigerate until ready to serve.

Makes 12 servings.
