Chiles Rellenos Casserole

Ingredients

14 ounces canned whole green chilies, seeded

1 1/2 pounds Monterey jack cheese, grated

4 eggs, slightly beaten

1/2 cup milk

1 teaspoon salt

1/2 teaspoon dry mustard

1/4 teaspoon pepper

Directions

Preheat oven to 350 degrees. Line bottom of 9 x 12 baking dish with green chilies. Sprinkle half of grated cheese over chilies and repeat. Combine eggs, milk and seasonings. Pour over chilies. Bake for 30 minutes or until lightly browned. Cool 5 minutes before cutting into squares.

Makes 12 servings
