Cheese Fondue

Ingredients

1 pound Swiss cheese, finely diced

3 tablespoons flour

1 clove garlic

2 cups dry white wine

1/2 cup Kirsch

1/8 teaspoon nutmeg

1/8 teaspoon salt

1/4 teaspoon white pepper

1 loaf French bread

Directions

Place cheese and flour in bowl and mix lightly. Cut garlic in alf and rub inside fondue pot until well flavored and discard garlic. Pour wine into fondue pot and heat on low until bubbles start rising to the surface. DO NOT BOIL. Add cheese one cup at a time, melting each cup before adding another. Heat until mixture begin to bubble. Add Kirsch and seasonings and stir until blended. Cut bread into bite sized pieces. Leave crust on each piece for ease of dipping into cheese.
