Bobsome Mai Tai

Ingredients

2 oz. Smith & Cross Jamaican Rum

1 oz. Freshly squeezed lime juice (save 1/2 spent lime for garnish)

1/2 oz. Cointreau

1/2 oz. Orgeat (you can buy some, but I just boil 1/2 cup almond milk with 1/4 cup sugar and chill, sometimes adding an optional splash of amaretto or brandy)

1/4 oz. Simple Syrup

Directions

Place ingredients into a shaker filled with crushed or bagged ice, and shake as hard as you can for 10 seconds to wake up the ingredients.

Pour the contents of the shaker into a tall glass and top with ice.

Garnish with the half of spent lime (the island) and a large sprig of slapped fresh mint (the palm tree).

Drink with a straw and on a hot day the ice will gradually melt and increase the dilution nicely.
