Remove the wings by twisting away from the body and cutting down the natural crook of the joint.
Use a chef’s knife or cleaver to cut through the breast bone to separate the breast. This will take some heavy downward pressure.
That’s it, you should have two wings, two breasts, and two leg quarters.
