How to Cut Up a Chicken

Start with a whole chicken facing like so. This is an organic chicken from Costco.

Pull the leg away from the body and cut down through the thigh following the natural crook of the joint to separate the leg quarter. Repeat on the other side.

Use kitchen scissors to cut down the sideĀ of the backbone.

Repeat down the other side of the backbone to remove the backbone.

Remove the wings by twisting away from the body and cutting down the natural crook of the joint.

Use a chef’s knife or cleaver to cut through the breast bone to separate the breast. This will take some heavy downward pressure.

That’s it, you should have two wings, two breasts, and two leg quarters.
