Strawberry and Cream Crepes

Ingredients

3 cups fresh strawberries sliced

1/3 cup granulated sugar

1 cup cottage cheese

1 cup sour cream

1/2 cup confectioners’ sugar

12 cooked crepes as in “Peach Crepes Flambe or Crepes Suzette”

Directions

Prepare crepes and set aside. Combine strawberries and sugar and let stand to sweeten. In food processor or blender place the cottage cheese and process until smooth. Stir in sour cream and powdered sugar. Reserve 1/3 of this mixture for a topping and a few strawberries for garnish. Combine remaining strawberries with mixture and fill each crepe. Fold over crepe and top with cream mixture and strawberries.
