Shrimp Curry

Ingredients

3/4 pound shrimp, cooked and peeled

1/4 cup onion, chopped

3 tablespoons butter

3 tablespoons flour

1 teaspoon salt

Dash pepper

1 teaspoon curry powder

1/4 teaspoon powdered ginger

2 cups milk or coconut milk

Rice, cooked

Condiments: peanuts, raisins, chutney, toasted coconut, crumbled bacon, green onion.

Directions

Cook onion in butter until tender. Blend in flour and seasonings. Add milk gradually and stir until thickened. Add shrimp and cook about 3 minutes longer. Serve over rice and pass condiments.

Makes 6 servings.
