These are crepes served hot from the pan. A special treat fora special occasion.
3 eggs or 1 egg and 2 yolks
1 1/4 cups milk
3/4 cup all-purpose flour
1 tablespoon sugar
1/2 tablespoon salt
Butter
Confectioners’ sugar
Directions
Beat eggs until thick and lemon colored. Stir in milk. Sift dry ingredients together and add to egg mixture. Mix until smooth. Spread very thin layer of batter on buttered nonstick pan. Turn when light brown. Roll and dust with confectioners’ sugar
