4 boneless skinless chicken breast halves, slice 1/4’ thick
2 tablespoons canola oil
2 cups fresh mushrooms, sliced
1 package frozen snow peas, thawed
2 1/2 tablespoons cornstarch
1 1/2 cups canned chicken broth
1 teaspoon sugar
Soy sauce to taste
2 cups cooked rice
Directions
Heat oil in heavy skillet or wok. Stir-fry chicken until brown. Add mushrooms and cook until limp. Add snow peas and stir until heated. Remove chicken mixture to serving plate. Add remaining ingredients to skillet and stir until thickened. Pour mixture over chicken and toss. Serve over rice.
