Chicken Scallopini

Ingredients

4 boneless skinless chicken breast halves

1/2 cup Italian bread crumbs

1/2 teaspoon basil

1/4 cup olive oil

1/4 cup sherry

1 clove garlic

1 lemon, thinly sliced

2 teaspoon capers

1 egg beaten with 1 tablespoon water

Directions

Pound chicken very thin between 2 pieces of plastic wrap. Combine basil with bread crumbs. Dip chicken into beaten egg, then into bread crumbs.Heat oil with garlic. Remove garlic and brown chicken on each side over medium heat. Add sherry and top with lemon slices and capers. Simmer 5 minutes until tender.

Makes 4 servings.
