Sauces Italian Raw (Heated)

1 cup heavy cream
3 tablespoons butter
2/3 cup freshly grated Parmesan cheese
Pepper, freshly ground
Pinch of nutmeg, freshly grated
Heat cream and butter in heavy skillet. Reduce in volume and thicken as it cooks. Add cheese, pepper and nutmeg. Excellent sauce with pasta, seafood or chicken.
Makes 1 1/2 cups sauce
