Preheat oven to 350 degrees. Bake potatoes until well done. Cut top 1/3 slice from one long side of each potato. With large spoon scoop out potato leaving small layer of potato inside skin to form cup. Mash potatoes with milk in electric mixer. Salt to taste. Add 1/2 cup cheddar to mixer and mix well. Fill each potato cup with potatoes. Top potatoes with remaining 1/2 cup sharp cheddar. Bake until cheese melts and is golden brown.
