Squash Casserole

Ingredients

6 yellow squash, sliced

1 medium onion, sliced

1 cup cheese, shredded

2 eggs

1/2 cup milk

1/2 stick butter or margarine, melted

20 saltine crackers, crumbled

Topping:

3/4 stick butter or margarine, melted

20 saltine crackers, crumbled

1 cup cheese, shredded

Directions

Preheat oven to 350 degrees. Cook squash and onion together until tender in small amount of water. Drain and add 1 cup cheese, eggs, milk, 1/2 stick margarine and crackers. Salt and pepper to taste. Pour into baking dish. Top with 3/4 stick of margarine, the other half of cracker crumbs and cheese. Bake for 20 minutes or until golden brown.

Makes 6 servings.
