Ingredients

1/4 large onion, sliced

3 cloves garlic, chopped

4 green peppers, julienne

1 medium eggplant, peeled and diced

5 small zucchini, 1/2 inch pieces

5 medium tomatoes, chopped

Salt and pepper

4 leaves fresh basil

Directions

Heat oil in large saucepan. Add onion and garlic and sauté until golden. Add remaining ingredients and cook on very low heat 30 to 40 minutes. This is good served hot as a vegetable dish or chilled as a relish.

Makes 16 servings.
