This is a flavorful dish that can be made entirely from the pantry. If you just keep the basic ingredients around (olives, capers, anchovies) they will stay good in the jar or can for months, and is a great one to keep in your back pocket for times when you can't go to the store.
1. Finely chop garlic and anchovies. Roughly chop olives and capers.
2. Put the garlic and anchovies in a sauce pan with olive oil until garlic is fragrant and lightly golden.
3. Pour in the tomatoes, olives, and capers.
4. Let simmer for 20 minutes minimum. If you let it simmer for longer the flavors will keep developing, it gets better with time.
5. While you wait for the sauce, boil pasta noodles in salted water
6. Don’t add salt to the sauce before you taste it! All the things you just put in there are so salty. Taste it, and then decide if it needs it. Add freshly ground black pepper if you want
7. Boil pasta noodles while the sauce is simmering.
8. Mix the noodles and the sauce.
