Chocolate Chip Cookies

I like fresh-baked cookies with residual warmth and gooey chocolate, so I put the finished dough into a container in the fridge and make small batches so we can have fresh hot cookies for a few days.

Ingredients

2 sticks (1 cup) room-temperature butter

3/4 cup granulated sugar

3/4 cup packed brown sugar

1 teaspoon vanilla extract

2 large eggs

2 1/4 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon salt

2 cups chocolate (1 package of Nestle semi-sweet morsels, other chips or cut up bars)

Directions

Preheat oven to 375° F.

In a large mixer bowl, or a large bowl using a stiff spoon, beat butter, granulated sugar, brown sugar and vanilla extract until creamy. Add eggs, one at a time, beating well after each addition.

Combine flour, baking soda and salt in another bowl and mix with a tiny whisk.

Gradually beat flour mixture into butter mixture.

When everything is mixed, gently stir in chocolate pieces.

Drop by rounded tablespoon onto an uncreased baking sheet.

Bake for 10 minutes or until golden brown around the edges while the center is lighter and still soft.

Gently remove to wire racks with a fish turner or let cool two minutes and transfer to a wire rack to cool completely.
