Bobby’s Whole Grain Bread

When I got tired of cooking in my bread machine, I wanted a bread recipe that was just as easy. This was the result.

Ingredients

2 cups water

2 cups white bread flour

2 cups whole grain flour such as rye, spelt, kamut, or wheat

1 tablespoon yeast

2 teaspoons salt

Directions

Make the dough with a stand mixer: Add all ingredients in order to a stand mixer. Turn mixer to low for 2 minutes and then to medium for 8 minutes.

Make the dough by hand: Add all the ingredients and stir to form a dough. Dump onto a floured surface and knead until a soft dough forms.

Rise and bake: Transfer the dough into a greased bowl, cover with a cloth and let rise to double. Dump the dough onto a floured surface, fold, then shape into greased loaf pans. Cover and let rise until double. Bake in a preheated 350 degree oven for 25-40 minutes until the internal temperature reaches 190 degrees.
